“SWEET CANVAS” at Mode Kitchen and Bar at the Four Seasons.
Feeling completely and colourfully inspired by dinner and dessert the other night at Mode, a restaurant at the Four Seasons hotel. Available only during the Vivid festival 2019, you can book a sensory dining experience called Chroma dinner. Expect experimental flavours in synthesis of coloured light shows, aromatics, and “cocktails.”
Dish 1: FISHING IN THE JUNGLE
with Hiramasa Kingfish, Aboriginal green ants, herbs chlorophyll and stracciatella served with a Green Savana Jelly cocktail amongst Wild Flowers and Amazon vibes.
Dish 2: REEF PROMENADE
Spanner Crab Risotto, purple cabbage and scampi caviar served with Toji Junmai Ginjo sake amongst Coconut Islands while “Swimming with the Dolphins”.
Dish 3: DEVIL’S BATH
Ruby Snapper, smoked strawberry gazpacho and radish served with a Strawberry Fields cocktail amongst a Campfire “By the Fire”.
Dish 4: SWEET CANVAS
White Chocolate, vanilla & mandarin sphere alongside Blueberry, Pistachio and Raspberry “Paint”, served with “La Vie” cocktail amongst the smell of Cotton Candy in a Psychedelia light show.
@elliott_roussel came out to introduce the dessert to us, and said “Be as creative as you want!” 🎨
This experience was incredibly unique and different. It was nothing I expected and was completely blown away.
The highlight of the experience was definitely the dessert, as it was the most interactive. The only dish I didn’t like was the Red Snapper, which had an odd combination of flavours that I couldn’t get my head around. However, I still recommend this experience highly.
