Chef Marcello has done it again at Sonder Cafe

When I was a child, it was dream to win a Golden Ticket to a Willy Wonka factory and have a tour of the most magical place on earth, and leave with a lifetime supply of chocolate. The lifetime supply of chocolate is out of my reach now, but it doesn’t mean I have to stop chasing that magic. One of my favourite chefs in Sydney, Marcello, is my Willy Wonka - a creative and plating genius - his work isn’t just delicious, it’s literally art. Every dish tells a story, every pipe of icing has a purpose, and nothing is without a little bit of a lot of humour.
What we ate:
Wiggle Wiggle Wiggle - Organic granola, mixed nuts, pannacotta, pink gum honey, fruits, nuts, berries and milk. Not only is this beautiful but also delicious. It may seem like a lot of food, but it’s just the bowl deceiving the eye.
Lalan Eats and Sweet Jaybee
Waffles and Nutella, Peanut butter, Banna mousse topped with rainbow cereal, berries, fruits, churros, served with pannacotta and oreo. Not something that I would eat on a regular basis, but would make a fantastic treat to share if there are at least 2 sweet tooths at the table.
Love Bite (best to share)
Hotcake with Canadian maple white Belgium White Chocolate Rose w 24k Gold Leaf, Coconut icing, berries, fruits, strawberries, Dulce De Leche, ice-cream (depending on Chef’s finds). I ADORE this dish - it’s so pretty but also it’s so delicious. The hotcake is extremely fluffy and soft. Would make a great date plate.
Benny Colada with fresh avo base and organic rapeseed oil, dipped in house made coconut chilli zaatar, dukha, beetroot dust, kay lan spinach, poached eggs and saffron sriracha hollandaise. This was my favourite dish of the day. I loved the crunchiness of the dukha, it’s a stand out amongst the many eggs benny dishes I’ve had. Make sure you get the LAMB SAUSAGE - it’s a revelation.
Mexican Dona Meets Mr Kimchi
Soft tortillas, fried egg sprinkled with gochugaru, ikura, avocado, beet minted labneh, kimchi, pickled jalapeno, reddish and random snips. This is Mexican vs Korean, and it works. The soft taco works well with the fillings, though I would be interested to taste everything in the crispy taco shell. The kimchi is a little strong for me, so I ate mine with half of it taken off.
Banh Mi If You Can
Vietnamese roll with French aiolo, fresh Blue Swimmer Crab, shallots, coriander, cucumber, pickled carrots, bird eye chilli, Banh Mi dressing on baguette with crushed peanuts. Loved the freshness of the crab combined with the crisp and crunchy garnishes.
Once You Go Dark You Can’t Go
Organic Black Rice quinoa linguine with fresh Blue Swimmer Crab with ponzu, basil, lime, chilli, medley, crispy garlic, greens, seaweed caviar and Black Truffle. My second favourite, I can easily see myself having this for lunch on the regular. Personally I could have had more truffle, but it was tasty nonetheless.
Love My Food and Overthinking! On green milk bun with oak, tomatoes, hemp seed, kale, house made falafel, turnips, hummus served with beetroot, carrot and parsnip chips. I enjoyed the very juicy falafel patty, and those chips were very delicious - I love when fries don’t have to be potato.
Forgive My French
Pineapple filled French Toast bites with berries, fruits, Canadian maple with house-made pineapple cinnamon drizzle and pannacotta. Now you know why I think Marcello is Willy Wonka. Don’t be fooled, this really is french toast. And surprisingly, not as sweet as I thought.
