An intimate look into one of Barangaroo’s exclusive yet casual dining spots, WILD SAGE.
Despite being open for just over a year, Wild Sage quickly became popular in the area and have grown quite a fan following over its time. Their secret? Great food, fantastic open and relaxing space, and clever understated excellence in marketing - let the food and space speak for itself and the crowds will follow.
I had been to WILD SAGE plenty of times in the past, for cocktails and the occasional brunch (you must try the French Toast, it is crazy good!), but only recently becoming invited to blog.
A picture of ME, enjoying my off-the-menu cocktail, inspired by one of their local favourites - the bubble tea cocktail. It was quite a sweet, but tasted just like an Asian Iced Tea.
One For the Lady - Belvedere Pink Grapefruit, Shiraz Gin, Pama Pomegranete, dash of rose water + lime.
A photo from earlier in the year, One For the Lady with a beautiful flower garnish.
Gentleman’s Agreement - Knob Creek Bourbon, Hakushu Single Malt, cranberry, lemon, grapefruit bitters, tarragon. Rich + sweet flavours of wiskey w. smooth fruity body & herbal notes
I highly recommend WILD SAGE for their cocktails. My partner ordered this one, because he didn’t want to feel “girly” but still enjoy a beautiful drink.
I actually much preferred this to my Bubble tea cocktail; it was smooth, rich, malty and earthy, but I think it is perhaps I prefer savoury over sweet.
BURRATA - served with bread, olives, zucchini strings and raddish*
I love Burrata, especially taking part in some healthy “burrataporn”, however I was not a fan of the other elements on this dish.
The bread was a bit on the chewier side for my liking, and I left most of the vegetables on the plate. Extra seasoning did make this a bit more palatable.
Honestly, just give me the burrata by itself and I’m a happy bear!
*May not be actual menu elements, I just forgot to record the menu item that night so I am now taking an educated guess by the picture, silly me; if you know the actual items please let me know!
PORK BELLY LOLLYPOPS w. cabbage dikon, pickled carrots, seasame seeds, shallots + chilli aioli
Perfect for Pork Belly lovers out there. We loved the marinaded flavours on the pork, and the meat was extremely tender.
For me, sauce is everything, and the chilli aioli was the perfect accompaniment.
LOBSTER TACOS - Soft tacos w. lobster popcorn, cabbage slaw, grilled pineapple chilli salsa + smoked aioli
A fantastic idea for a dish, however not perfectly executed.
Though delicious, the lobster flavour was lost in the dressings and the crispy batter. I would be equally happy if the tacos were another kind of seafood.
Otherwise spot on! Soft tacos were melt-in-your-mouth delicate, great salsa and sauce.
SWEET POTATO GNOCCHI - Pea puree, grilled asparagus, persian feta, crispy kale + dry ranch
DO NOT LET THIS DISH FOOL YOU - IT IS MORE DELICIOUS THAN FIRST APPEARS!
One look, and it’s rectangular cut sweet potato on a bed of puree.
One taste, and you wonder why you’ve not had this sooner.
This is without a doubt one of the BEST gnocchi dishes I’ve ever had, and it’s definitely a combination of factors: 1) innovation; 2) perfect combinations of textures including the crispy kale, soft asparagus and slight bite of the gnocchi; 3) herbs + spices that brought it altogether.
It’s also Vegetarian, which also makes this my favourite Vegetarian dish to date.
Obviously, highly recommended.
BRAISED BEEF CHEEK - Spiced carrot puree, caramelized speck, cocktail onion, heirloom carrot, enoki mushroom, crispy curry leaves
A good way to measure the love and care the restaurant puts into a meal is the way they treat a cheek.
In this case their love is gentle and tender.
I do not have many words to say about this dish except… there was nothing left by the time we were done with it ;)
Address: Exchange Place, 3 Sussex Street, Barangaroo, Sydney, NSW
Price Guide (approx): $75pp
Great atmosphere and service staff are very attentive (even for visits that weren’t complimentary in the past), innovative dishes that were beyond exceptional
One of the best in the Barangaroo area
A couple dishes may need some rejigging, however, overall the restaurant is fantastic and highly recommended.
